The Story Behind the Bottle
Mike Roberts founded Ridgeview Estate in 1994 with the aim of creating world-class sparkling wines on the South Downs. He chose the site because its soil is the exact same chalk/clay mix as found in Champagne, and the climate is similar too – perfectly suited to Chardonnay and Pinot Noir. Such has been their success that several big Champagne houses have made overtures to buy Ridgeview – and Taittinger have bought land nearby. Cavendish is their classic Champagne-style blend – rich, rounded and exceptionally balanced. The Roberts family recommend serving it with Sussex charcuterie or richer canapés like smoked duck, salmon pâté or grilled vegetables.
