Founded by monks 800 years ago, the domaine has 28 hectares of vines on some of the appellation’s finest sites. The 14th generation to work the estate, Daniel-Etienne is meticulous in both the vineyard and the cellar, creating wines that are built to last. Vaillon has southeast-facing slopes, with morning sunshine, so the grapes ripen with ease. Malolactic fermentation and over a decade's ageing on lees in tank, with monthly bâtonnage (stirring of the lees), lend real richness, structure and weight. With the qualities of the 2014 vintage – it was a top year for precise, tight, mineral wines that have aged very well – this is certainly a Chablis to treasure. Serve cool in large glasses with fine seafood.
