The Wine
With a family estate rooted in Burgundy and Beaujolais, Laurent Guillot could easily have stayed in this prestigious part of France and focused on Pinot Noir and Chardonnay. However, he was keen to look further afield to the vineyards of better-value southern France. And that’s where he’s stayed, coaxing out delicate fruit elegance from the likes of Grenache, Syrah and Cinsault. Chais du Moulin is a delicate rosé, with the most delicate of blushes made from a 50/50 blend of Cinsault and Grenache, not unlike you’d find in the finest estates of Provence. With zesty red berry and citrus fruit, this is a very pretty pink, ideal as an apéritif or with charcuterie, white fish and lighter dishes.
