The Story Behind the Bottle
Our winemaker-come-buyer of the Languedoc lives in Pézenas, so he’s always right on hand to discover a particularly fine vineyard. He had his eye on a plot of Vermentino that he’d spotted in Millas, a village in the foothills of the Pyrenees. Cool winds and the altitude of the vineyard means the grapes retain dazzling freshness. At a cellar in Béziers which Mark calls his Mediterranean chai, he works his magic, fermenting the grapes in seasoned oak barrels and lees ageing it in cask for a further five months. The upshot is an intensely lemony, crisp white with a creamy roundness and a subtle touch of oak, hints of wild herbs and flowers. A fine wine from the Languedoc, ideal with baked salmon, fish pie, chicken pilaf and salads.
