The Story Behind the Bottle
From a family long established in Chablis, Samuel Billaud started his winemaking career at the family's Domaine Billaud-Simon in 1985. After a 5-year dispute with his uncle, he decided in 2009 to set up on his own. He started out by buying in top-quality grapes, before inheriting some prized Premier Cru vineyards from his father. Today, he has carved out a reputation as a leading figure in Chablis. His Les Vaillons uses grapes from prized 70-year-old vines within the Premier Cru. Organic farming, early picking, minimal use of oak and long lees ageing lend a richness and breadth to the wine, whilst retaining a core of intensity and freshness. For drinking now, open early, or cellar a few years longer. A very fine glass with salmon en croûte.
