Flavour Profile
The southern Rhône’s named villages – allowed to put their name on the label –deliver remarkable richness as well as value. One of the best is Sablet, a village in the foothills of the Dentelles de Montmirail, near Gigondas, and Père Guillot Sablet is a great example.
Planted in the sandy soils of higher altitude vineyards, overlooking the Plan de Dieu, the hardy vines withstand a constant blast from the Mistral wind. The result is healthy vines and small, concentrated berries.
It’s made by Laurent Guillot, whose family originated in Burgundy. However, he has a great love for the wines of the south, so now makes wine there too. Père Guillot is a silky, elegant red with violet and wild herb aromas, silky black fruit and gentle spice. An ideal match with grilled meats or herby casseroles.
