To achieve this, Mark selects grapes not from the pricey, famous-name appellations, but from hidden vineyards across the Languedoc, where the quality is outstanding.
Each year Le Champ des Etoiles is crafted with the finest Chardonnay grapes of the vintage, sourced from trusted growers and cooler sites to preserve freshness and minerality. Ageing on lees in barrel lends a creamy, rounded texture and subtle complexity, while the keeping the vibrant fruit front and centre. Serve gently chilled and pair with roast chicken, mushroom risotto or grilled salmon.
