Flavour Profile
If you like a classy white wine, with delicious ripe fruit and freshness, creamy weight and just a touch of spice, then tuck into a glass of Hérisson Chardonnay. It’s from the exceptional winemaker Adam Mason, whom we’ve known since the 1990s.
Adam was fresh out of wine college and came to work for us as a Flying Winemaker, making great wines in French cellars. There he encountered the hedgehog, or hérisson, a metal pyramid with spikes for drying bottles, and where this wine gets its name.
On his return to South Africa in 2001, he worked for some top estates including Klein Constantia and Mulderbosch, before deciding to put all his effort into making wines for himself.
Adam loves cool-climate Chardonnay – the most expressive grape to show off the region in which it's grown. For Hérisson, that's the lower slopes of Stellenbosch mountain and Atlantic-lashed Lutzville, along the coast. Whole bunch pressed, cool fermented and cask matured, this is a rich, complex white from a vintage Adam called “amazing … so good the wines make themselves”.
