This is one from vines planted 600 metres high and 30 miles inland from the coast. So, while Spanish holidaymakers flock to Valencia’s beaches, the sunny arid hills further inland are a haven of calm. It's there that this grape ripens to perfection, with cool nights lending balance and freshness.
