He’s made it the only way he knows how, like a fine wine. He started with finest olives from premium Rioja groves owned by old friends – who have been growers for decades.
Just like Jean-Marc’s vines, their groves are at much higher altitude than is normal for olives. This makes for an oil of greater complexity and quality. He’s even put a vintage on the label, so you know it’s fresh as can be.
Then in the masara (the equivalent of a winery), it’s the full VIP treatment. Hand sorting, carefully removing leaves and other debris, traditional pressing ... the result is truly delicious.
Fresh and vibrant, with lush green fruit, freshly cut grass and a gentle peppery kick. Beautifully balanced, with a lingering spicy finish. Equally delicious drizzled over roasted seasonal vegetables as it is over a fresh garden salad.
