Here, freedom from the corporate rule book, healthy competition between ‘mates’ and an overriding air of creativity beget great wines. Wines that have caught the imagination of critics and customers alike. Cabernet and Shiraz grapes were selected from top South Australian vineyards, then fermented in small vats with regular plunging of the grape skins to extract maximum colour and flavour. Gentle ageing in oak has resulted in luscious berry fruit with underlying tones of creamy vanilla and spice. A tasty accompaniment to shepherd’s pie, lamb or steak.
