Big, bold and beautifully crafted, this is a sumptuous Amarone. Over the years its intense, complex flavours have won the cellar an extraordinary number of Trophies and Golds – this 2011 has added another two from international competitions. That 24 carat track record is a testament to the labour of love production of Stefano Falla and a cellar that is credited with inventing this dry version of Recioto Amarone in 1936. Hand picked and hand selected grapes are left to dry for four months, during which time they lose at least 40% of their weight. The grapes are pressed and macerated for 30 days before the rich, fruity liquid is carefully, slowly fermented prior to two years in oak. Decant an hour before serving with game or a rich casserole.
