Santenay lies in southernmost Côte de Beaune and takes its name from ‘santinae aquae’, Latin for healing water. Since Roman times Santenay has been a thermal spa. But today it is best known for fine Burgundies, red and white. This superb, top vintage white is from Albert Bichot, the wines of which are characterised by elegance and delicate nuance – think prima ballerina grace and precision footwork. In 2017, quality was outstanding – “so delicious and refreshing that I predict you will be seduced” (Neal Martin, Wine Advocate), “a nuanced, terroir-driven vintage” (James Suckling). This wine is from Bichot’s Domaine du Pavillon. Barrel ageing for up to 16 months with 20% in new oak lends a delicate seam of toasted vanilla to the pretty fruit.
