Les Preuses more than lives up to its Grand Cru status and terrific reputation. Robert Parker writes: “Les Preuses has the best exposition of any of the Grands Crus on the côte, being higher up on the hill with even better drainage than its neighbours.” Plus the vineyard receives more sunshine hours than any other in Chablis. Add to that the skill of Domaine Servin’s Aussie winemaker, Marc Cameron, son-in-law to the owner, and no wonder this wine has received such high acclaim and 94pts in this exceptional vintage. Marc teases out the richness of this Grand Cru, ageing it on lees in old oak barrels – not for oak character, but for enhanced texture. Open early, let it breathe and serve in large-bowled glasses with fine white meat or fish.
