This exemplary 17th century estate is run today by François Servin, along with his Australian brother-in-law, Marc Cameron. Unsurprisingly they manage the estate with a combination of tradition and modernity. They have received much praise – writer Andrew Jefford recommends the wines for their “great elegance, purity and length”. All the grapes are hand harvested and each plot fermented separately to allow the individual parcels to express terroir. This superb wine is all from the Grand Cru vineyard Les Blanchots, planted on some of the finest fossil-rich soils of Chablis, and with excellent exposure. It has terrific raciness, elegance and depth. Stash away for another year or two, then enjoy cellar cool with fine seafood or white meats.
