Flavour Profile
Every vineyard has secrets. Night of the Living Red, from Australia’s multi-award-winning RedHeads, is born from restless vineyards and whispered legends – strange noises and fleeting shadows that inspired the team to craft something dark and brooding.
Alex began by persuading local grower Joe Roccat to part with his finest Durif grown at One Tree Hill. From there, he ventured to Barossa’s Ebenezer for premium Shiraz, working with fifth-generation Adrian ‘Hoffy’ Hoffman, whose 130-year-old vines impart remarkable flavour concentration.
For the finishing touch, Alex added a splash of Touriga Nacional rescued from an abandoned vineyard lost to time. And while its origins remain a mystery, its depth and intensity is enhanced through ageing in a traditional solera system – more reminiscent of Spain’s Jerez than South Australia.
The result? A luxuriously smooth red wine bursting with gorgeous ripe blackberry, plum and raspberry, layered with spicy vanilla oak and a rich, lingering finish. Pour generously and serve alongside steak, pork or hearty vegetarian dishes … if you dare.
