The Wine
Legend states that Madame Bollinger agreed to a Bollinger rosé under one strict condition: it had to be extraordinary. And she wasn't disappointed. To this day, vintage Bollinger rosé remains exceptional. It is the result of a unique blend between a great vintage champagne (92% of the grapes come from Grand Cru vineyards and the rest from Premier Cru), and a red wine from the legendary Côte aux Enfants. Crucially, the wine is barrel fermented, an expensive process adding considerably to the depth and complexity of flavour. Then, not only are bottles turned by hand over their six and a half years aging on lees, they are disgorged (the removal of yeast sediment) manually as well. Creamy, concentrated and complex, this is a rare treat.
