The Wine
Penfolds are best known for their Grange – arguably the world’s finest Shiraz. Their Bin 707 does the same magnificent job through a Cabernet lens. Launched in 1964, Bin 707 was Max Schubert’s original attempt to create a Cabernet-only red, rare in Oz at the time. Today, 707 is only made in years when fruit quality meets Penfolds’ exacting standards. With five scores of 97 or 98, it’s clear 2019 far exceeds that. This powerful, rich and complex red uses Cabernet from the McLaren Vale, Barossa, Padthaway and Coonawarra, all fermented and aged in new American oak hogshead (bigger than barriques). Dense black fruit entwines with savoury notes of spicy oak, while the perfectly weighted tannins and epic finish linger very long. Sublime.
