When our Buyer went on the search for a stand-out Prosecco, in looks, quality and price, his first thought was to knock on the door of our long standing friend Paolo Sacchetto. Paolo is based in the Veneto’s Prosecco region, following in the footsteps of his father and grandfather. Most importantly he’s the man behind the much-loved elegant bubbly Fili, so we knew he’d have something good! He works hard with absolute care in the vineyards, many of which are in the superior DOCG areas. In the cellar, he uses the latest methods, including a very gentle horizontal press to extract only the clearest juice, and slow, cool fermentation to lock in all its subtle aroma. A moreish pear and apple scented Prosecco, with only a gentle prickle of fizz.
