The Wine
The steep, high slopes of Saint-Romain used to be part of the Hautes Côtes de Beaune until 1947 when their standout quality ensured them appellation status in their own right. With his 12 hectares of vines – eight Chardonnay, four Pinot Noir – divided among 42 separate parcels, he is regarded as the touchstone for the very finest Saint-Romain. No wonder then that his wines are listed at 21 out of 26 of France’s 3-Star Michelin restaurants. He favours high-altitude vineyards, many over 300 metres above sea level. Part vinified in new oak barrels and part in stainless steel, Sous Le Château has poised, ripe white fruits, toasty spice from the oak, with freshness and intensity. Open early and decant or cellar. Serve cellar cool.
