Among the southfacing slopes of prestigious Stellenbosch lies the boutique winery Journey’s End. Its vineyards lie closest to the ocean and benefit from cooling breezes, which accounts for the pristine freshness of this exemplary Chardonnay. Owned by Rollo Gabb, the estate not only makes a small range of outstanding wines, but is also very community minded, building a school, a creche and much more. Their Sixty Barrels Chardonnay uses coastal-cooled grapes, treated to all the Grand Cru methods. Wild yeasts, fermentation in French oak barrels, lees stirring and ageing in cask – all the techniques used for fine Burgundy. This complex wine has a superb balance of bright fruit and subtle oak. A white to savour with salmon en croûte or chicken.
