Syrah - or Shiraz as it is known in the New World - is an inky dark grape behind the almost opaque reds of the northern Rhone's Hermitage, France's manliest wine (writer Hugh Johnson). But it also powers Australia's iconic Penfold's Grange and Hill of Grace reds ... plus the elegant, white pepper reds of New Zealand's Hawkes Bay. Smoky blackberry, dark chocolate, spice and liquorice are common flavours.
