The Wine
This superb Cava comes from a historic estate in the Penedès region – an area which, thanks to its cooler temperatures, is renowned for producing excellent sparkling wines. The Oriol Rossell family founded the estate as far back as 1637, and have now been making wine for over 40 years. Unusually these days, the family make their fizz using the same method as Champagne, with the second fermentation in bottle, and turn each bottle by hand. It’s a real labour of love. Ageing for two years on lees imparts a rich complexity and full body. Notably organic, this Cava unveils ripe apple and peach notes and complex toasty length. It's an ideal aperitif, paired with toasted salted almonds, jamón iberico and other tapas. Moreish from the first sip.
