France’s Languedoc is a wonderful playground for winemakers. They’re able to pick and choose grape varieties and methods to produce exciting, rule-breaking wines. This is certainly true for third-generation winemaker Joseph Bousquet – a man with ambition! He inherited 15 hectares of vines, planted another dozen in the nearby aromatic scrubland, then in 1997 took over Domaine Les Quatre Pilas and its 6 hectares of vines. With his first vintage, in 2001, he won many awards. Joseph is fastidious in the vineyard and makes a delicious range of wines. This white combines lemony Vermentino with the Rhône’s Roussanne, both grown on Joseph’s estate. Carefully fermented and lees aged, it’s creamy and richly fruity with great zesty freshness.
