Il Cavallino is a real top table fizz – the style locals love to drink. Last Christmas it was meant to be a one off parcel, but was so popular, our friend Paolo Sacchetto has obliged again. With soft apple, pear and citrus and only a gentle fizz.
"Smooth Prosecco. Very fine soft bubbles, delicious tasting"
When our Buyer went on the search for a stand-out Prosecco, in looks, quality and price, his first thought was to knock on the door of our long standing friend Paolo Sacchetto. Paolo is based in the Veneto’s Prosecco region, following in the footsteps of his father and grandfather. Most importantly he’s the man behind the much-loved elegant bubbly Fili, so we knew he’d have something good! He works hard with absolute care in the vineyards, many of which are in the superior DOCG areas. In the cellar, he uses the latest methods, including a very gentle horizontal press to extract only the clearest juice, and slow, cool fermentation to lock in all its subtle aroma. A moreish pear and apple scented Prosecco, with only a gentle prickle of fizz.

spice, dryness, body, depth of colour - were scored, rated and ranked by professional tasters.
Next came the boffins, making all those numbers talk to each other. And then out pops the recommendation.
