Daniel Etienne Defaix is renowned for his long-lasting Chablis – he's just released a youthful 2010 that was left in vat for 12 years! His 2020 is luckily for earlier drinking but, nonetheless, carefully nurtured every step of the way, from grape to glass. His 26 hectares of vines lie on a high, chalky slope that benefits from early morning sunshine, ensuring good ripening despite the region’s relatively cool climate. He follows a strict ‘triage’ – removing all but the best fruit from the vine, and sorting the grapes again in the cellar. After a slow fermentation, this 2020 was left to rest on its fine lees for 18 months and bottled without fining or filtering for maximum complexity. A classic with creamy chicken, gougères or fine seafood.
