Tio Pepe’s En Rama is nicknamed ‘wild and alive’. That’s because these are sherries ‘in the raw’ so to speak, still alive with the complexity of yeasty flavours that give the golden liquid its richness. ‘Wines’ are drawn down from casks in springtime, when the yeasts are at their strongest and most lively. Winemaker Antonio Flores then sweeps through the cellar, tasting all the Finos, to pick just 100 botas (casks) that might make it into the final selection. He narrows that down to 60, then blends them. There is no filtration or fining, hence all those wonderful flavours, but the sherry is allowed to settle before bottling. Flores describes his Tio Pepe En Rama as “fragrant, intense, brilliant, salty and immaculate”. Great with seafood.
