Shaw and Smith began in 1989 when, over a family lunch, cousins Martin Shaw and Michael Hill Smith decided to realise a long held dream: to make wine together. They brought together a wealth of experience, Martin being one of the original ‘Flying Winemakers’ and Michael one the first Aussie Masters of Wine, and from the renowned Hill Smith family. They set up in premium Adelaide Hills, renowned for its cooler climate. This glorious white is named after the original M3 vineyard, owned by three Ms: Martin, Michael and Michael’s brother, Matthew. They now source the fruit from throughout the estate, always the best of the vintage. Barrel fermentation with wild yeasts, ageing in oak with lees stirring, it’s a rich, complex white of real class.
