Venice’s 18th century R’dotto casino was home to Europe’s elite. Here they would risk all in a variety of games – high stakes but potential rewards were huge. Their favourite game was Rosso, the ultimate five card trick. Four red aces plus a joker. This is RedHeads’ Five Card Trick – Sangiovese, Nebbiolo, Primitivo, Carignan and Lagrein – and we certainly think the gamble has paid off. The grapes were sourced from two of RedHeads’ most meticulous and ‘out there’ growers, Adrian Hoffman and Robin Day, in top Adelaide sites. Each variety was picked at optimum ripeness, brought to the RedHeads studio and carefully fermented in open top barrels with punch down by hand. With its bright cherry fruit, this is a tasty match for spaghetti Bolognese.
