Matt Thomson has worked over 40 vintages in the 24 years he’s been a winemaker. He’s had experience around the globe and consulted for some of the most famous names in the business, but finally he decided, with his winemaker wife Sophie, to make wine for himself. His Blank Canvas represents the vineyard, he says, the grape and winery his brush and palette. His favourite source for Sauvignon is Dillons Point and the Holdaway family’s vineyard (close to the sea) is one of the best. Fermented with wild yeasts in barrel, this is a complex, textured Kiwi Sauvignon. Instead, it's a rich, subtly spiced white, with passionfruit and guava and a saline edge. Unfiltered, it may have sediment. Simply let it settle. Ideal with seafood and white meats.
