It takes nerves of steel to be a Sauternes producer. You have to wait not only until the grapes are fully ripe, but have developed the essential noble rot too. This adds layers of luscious complexity, as well as amazing intensity. It was particularly tricky in 2018 due to localised hail in July and a rain-free summer. But those who sat it out were rewarded with gems like this. Château Pleytegeat is owned by the renowned (in Sauternes) du Hayot family, who have six other properties in the appellation, including Deuxième Cru Classé Romer du Hayot. Made largely from Sémillon, with a touch of Sauvignon, and fermented with natural yeasts, this is a beautifully balanced, complex sweetie. Serve chilled with foie gras or creamy fruit tart.
