The grand, 19th century Le Chai cellar, situated on the banks of the Dordogne in Castillon, is the centre of our French winemaking. There the aim is to make Grand Cru style wines for moderate prices. Mark Hoddy discovered grapes for this delicious Chardonnay in a stony vineyard up in the Montagne Noire foothills, close to Carcassonne. Conditions are tricky, but quality can be excellent – if you can keep the wild boar out! Still, Mark only makes this wine in the best vintages. He divides the wine into three parts – a portion is fermented in stainless steel for a full fruit style, another in new French oak (just 20%) for spice, and the last (30%) in older oak – to obtain a perfect harmony of fruit and vanilla. Great with salmon or chicken.
