When winemakers along the French coast finish a day hefting fruit under the late summer sun, they flock to one of the many oyster shacks dotted along the beaches. Only two things are sold here: oysters and a single wine. (They’re not classed as restaurants, so by law they can only offer one.) Of course, to satisfy thirsty winemakers it has to be the freshest, liveliest white. It was in one of these shacks in the Cap Ferret, just an hour and a half west of Bordeaux, that our talented buyer, Jean-Marc, was inspired to seek out Les Belons. It’s lovely ripe Sauvignon Blanc with a dash of the local hero Gros Manseng. This portion adds apricot and peach notes to the bright stony lemon flavour. A super tasty aperitif any time of the year.
