Jean-Marc Sauboua is our talented, Haut Brion trained winemaker at Le Chai au Quai. Not only is he very good at his job, but he has an enviable network of contacts, which gives him access to terrific parcels of grapes. So while this rich claret may have Médoc on the label, more often than not, J-M has sourced the fruit from loftier appellations. Unusually for the Left Bank of Bordeaux, this wine has a high percentage of Merlot, with Cabernet playing a supporting role. This and the long, hot summer of 2018 accounts for the lovely ripeness and fruity depth of this red, flattered by the subtle vanilla oak from a few months in barrel. Let the wine breathe for an hour or so in a decanter and serve with roast lamb, beef or a rich casserole.
