Winemaker Mark Hoddy is always on the lookout for something new to dazzle your taste buds. He discovered a few rows of Cabernet Blanc in the Languedoc in 2016. They belonged to a grower near Béziers who’d been working with Swiss and German ampelographers to trial Cabernet Blanc. Making white wine from red grapes is always tricky because of the colour, so they had cultivated a Cabernet variety with white skins and white flesh. Its wines, in Mark’s talented hands, exude bright apricot and apple fruit with underlying grippy mineral freshness. Exactly what you’ll find in La Nuit Blanche. Mark carefully cool fermented, then aged the wine on its lees, and bottled it early to capture maximum fruity zip. Delicious solo or with chicken or salmon.
