Founded in 1835, Gonzalez Byass are a great name in Spanish wine. They are recognised as ‘Best Spanish Wine Family’, were named ‘Best Winery of Spain’ in 2014, and are counted among the Top 100 in the World by wine critics. Starting in sherry in the Jerez area, they’ve spread their wings to other parts of Spain, but sherry remains their flagship wine. Palo Cortado is a Fino sherry, fortified to 18 degrees then long aged in the cellar. All components of La Canoa have been aged in casks for at least 12 years, using the solera system, slowly maturing, picking up layers of richness and complexity, and through evaporation becoming ever more concentrated. This is sherry to savour slowly on its own, with a cheese like Manchego, or with fruit cake.
