Having created fabulous Pinot Noir and Riesling wines, the great Ernie Loosen decided to create a more powerful, bold style of red at the historic J.L. Wolf estate (founded in 1756). Here he has crafted an intense and unusual blend of Cabernets, plus Merlot and Dunkelfelder to round it out. With such full bodied flavours, it was only natural that he named the wine after a legendary wild boar known as Phaia (slain, like many other large beasts at the time, by the Greek hero Theseus). After vinification the wine is aged for at least nine months in new and old oak barrels for complexity and port-like depth of flavour. Its sumptuous hedgerow fruit flavours are best complemented by wild boar sausages (obviously!), venison or lamb cutlets.
