Bardolino is a less well known appellation of northeastern Italy, next door to Valpolicella. Both make very fresh wines of all hues, thanks partly to the proximity of the mountains. Walter Delibori and Giorgio Cristoforetti founded Cantine Delibori – at the heart of the appellation and close to Lake Garda – 40 years ago. They work with a number of estates, the grapes for this pretty pink coming from Cà del Fer. It uses the classic grapes of this area – Corvina and Rondinella (the same as in Valpolicella) – the juice left on the skins for just a few hours to lend a delicate hue to the wine. Cherry fruit, floral hints and a bright, lemony, mineral freshness – a perfectly balanced rosato for drinking solo, with salads, seafood or creamy pasta.
