Greywacke was founded in 2009 by Kevin Judd, an illustrious figure in New Zealand’s wine industry. The wines are named after the soil from his first vineyard, which was littered with the prized, local greywacke stones. Kevin partners with independent growers with mature vineyards, ensuring top-tier fruit quality every vintage. To craft these wines, he leases a small part of his friends’ Dog Point winery. He majors on Sauvignon Blanc and Pinot Noir, but also dabbles with Burgundy-style Chardonnay. The process involves hand-picked grapes, wild yeasts, vinified in older oak barriques, with some cuvées undergoing ‘malo’ (a fermentation that lends a creamier texture), all left to age on lees. This white is rich, complex and perfectly balanced.
