There were cheers of delight from customers when Garage wines returned to our repertoire. Both red and white are terrific tasting rule breakers created by Le Chai’s winemaker Mark Hoddy. From years working in the Languedoc, he knows exactly where to find the best grapes, which for this white were high altitude sites close to Carcassonne. Cooler temperatures, especially at night, slow the ripening and bring out the aroma, fruit and spot-on balance of freshness. Named after the trend for making handcrafted vats in garage sized sheds, it was made at Le Chai to ensure it received maximum TLC. Part fermented in oak, Garage White is bold with masses of fresh, spicy fruit and a creamy texture. Serve with fragrant Thai curries, chicken or noodles.
