This mouthfilling, black fruit stunner is a unique release from Le Chai winemaker Mark Hoddy. He combs the vineyards of southern France in search of exceptional fruit. In the frost-struck 2017 vintage he chose pure Syrah grapes all from top quality Minervois vineyards. As the wine is pure Syrah, it can’t be labelled Minervois, so Mark made it a vin de France. All the grapes were fermented by carbonic maceration (à la Beaujolais) for a supremely fruit-rich, smooth wine. Then back at Le Chai in Bordeaux’s Castillon, Mark aged all the wine in seasoned oak barrels for a year. The result is this richly flavoured beauty with fabulous blackberry, liquorice and toasty spice character. Decant an hour prior to serving with rich, hearty dishes.
