Fryer's Cove is an unusual winery – its HQ is an old crayfish factory that's built on a jetty that juts out into the South Atlantic ocean. The only one we know. Its vineyards are closeby too, which means they're buffeted by sea breezes and only see the sun once the daily sea mists have cleared. Great for Sauvignon Blanc freshness. Liza Goodwin is the talented winemaker there, cool fermenting this bright white so it positively shouts its freshness. Six months ageing on its fine lees (the sediment left after fermentation) with batonnage (a gentle stirring) adds roundness to this wine's texture. Chill it down – this tasty Sauvignon goes down a storm as a glass on its own, or with a fresh pea soup, delicate seafood or goat's cheese.
