With eight generations of experience, the Thibert family are well versed in making truly excellent Burgundy. The domaine is currently run by brother and sister Christophe and Sandrine. All their wines use only estate grown grapes, this 2017 taking fruit from their superb 90 year old Fuissé vineyards – tended organically and with minimal intervention in the winery. Their aim is to show purity of fruit and the terroir in their wines. Part ageing in barrel for 10 months adds a cream complexity to the bright fruit, with a hint of nuttiness and good minerality. With a little age this top vintage wine has rounded out. Pair with sauced white fish or lighter meat dishes. Serve in large bowled glasses so you can gently swirl and enjoy the flavours.
