Servin is a fabulous, 7th-generation family domaine, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s son-in-law, Australian winemaker Marc Cameron. Decanter journalist Andrew Jefford describes the wines of this estate as having “great elegance, purity and length” and this Grand Cru is of the finest. From the northwest edge of the Grand Cru hill, its wines are less austere. Still, this wine needs time to show at its best. If you can’t wait, make sure you decant the wine early and serve in large-bowled glasses. Serve with your finest seafood or poultry dishes.
