The Sabon family produce four Châteauneufs from different parcels within the estate. Les Olivets is from younger vines, but many of these are still two decades old, hence the wine’s gentle power. The Sabons remain endearingly uninterested in the latest technology – renowned wine critic Robert Parker refers to them as “one of the archconservative bastions of traditionalism in Châteauneuf du Pape” and frequently rates their vintages over 90 points. To the Sabons, generations of accumulated expertise, perfectly situated vineyards, and passion are the essential ingredients making up their world class wines. The glorious 2017 is packed with liquorice, herbs and raspberry character, plus hints of roasted meats. Decant and ideally serve with lamb.
