Based in the heart of Gevrey-Chambertin, this estate is run by Florence and her husband Champagne-born Simon. They worked at Florence's family domaine for 10 years, before deciding to start a venture on their own. Organic methods with the aim of being biodynamic too are indicative of the painstaking care they adopt in the vineyards and the winery. The skilled husband-and-wife team favour the use of whole bunch fermentation and adapt the winemaking to suit the needs of each vat. You can taste the lengths they go to in each wine. The grapes for this expressive red Burgundy are from vines over 30 years old in the Champ Franc climat. Matured for over a year in barrel, this red has superb purity of fruit and freshness.
