From Chablis's oldest estate, this is a magnificent, 15 year old Premier Cru. Daniel Etienne Defaix goes to extreme lengths to produce richness and structure in his wines. Only just released, this 2005 has complexity, honeyed minerality and length.

Wine Advocate wrote, "Daniel Etienne Defaix is one of Chablis's personalities, and his wines are no less characterful." Founded by monks 800 years ago, the domaine has 28 hectares of vines on some of the appellation’s finest sites. He is meticulous in both the vineyard and the cellar, creating wines that are built to last. Indeed, this 2005 has only recently been released. Les Lys lies at the top of Vaillons 1er Cru and is north facing, so the grapes ripen slowly. Malolactic fermentation and four years' ageing in tank, with monthly bâtonnage (stirring of the lees), lend real richness, structure and weight. 2005 was a top vintage, producing balanced wines that have aged very well. Serve cool in large bowled glasses with fine seafood.
