Grapes have been grown here at Diemersdal in the Durbanville Valley near Cape Town since 1702. Enough time to explore which of this estate’s decomposed granite and clay ‘Hutton’ soils are best for which grape, and which exact clone of Sauvignon works best here. The Diemersdal team have chosen five different clones for this wine, to achieve the greatest complexity. Grapes are harvested at night for optimum ripeness, and fermented very cool (12–14°C), to preserve zingy minerality and crispness. Proof, if anything more than a quick sip were needed, that this Sauvignon is a Cape classic. Indeed, the 2016 won double Gold at the National Wine Challenge (Top 100 SA Wines). Try chilled with summer salads, with a spicy stir-fry or sipped on its own.
