The vineyards of Château Prieuré-Les-Tours surround the ruins of an 18th century monastery, overlooking the Garonne estuary. They lie on the Portets plateau, famous for its clay and gravel soils, which lend gravitas to its fine wines. Owner since 1991 is Jean-Baptiste Solarzano. His Prieuré-Les-Tours is particularly appealing with its high percentage of Merlot, supported by the dark cassis and structure of Cabernet Sauvignon and the leafy raspberry flavours of Cabernet Franc. Aged for eight months in oak barrels, the wine has subtle notes of toasty spice. Stand the bottle upright a few hours to allow any sediment to drop to the bottom, then carefully pour. A fine red for roast red meats or game, or a stuffed Portobello mushroom.
