Thirty five years old and still going strong, this is a fabulous, mellow, but still bright, sweet wine from Sauternes. It's from an historic property founded in the 16th century, too. Notes of honeyed peach and apricot, candied orange, vanilla and toasted spice, it's a sumptuous white to serve at the end of a meal. So old and rare, it's a great dessert wine to savour on its own, but is certainly a classic with blue cheeses, foie gras or puddings – from fruit tart with crème pâtisserie, even with treacle sponge or the festive season's Christmas pud. Chill down well, this wine can take it, and sip slowly.
